In a bowl, marinate 1 pound of chicken breast with yogurt, turmeric, cumin, coriander, chili powder, and salt. Let it sit for 30 minutes.
Heat a grill pan over medium heat and cook the marinated chicken until fully cooked. Set aside.
In a large pot, cook basmati rice with cinnamon, cardamom, cloves, and bay leaves until half done.
Layer the partially cooked rice with the grilled chicken in the pot. Top with fried onions, mint leaves, and cilantro.
